Peppermint Chocolate Cookies

Stefan and I have been bit by the cookie bug…we can’t get enough lately! We decided to step away from our usual Pillsbury pre-made dough and make our own cookies from scratch (sort of). I hopped on my trusty Pinterest to find a recipe and came across this Oreo Peppermint Crunch Cookie recipe. I liked the sound of it, but decided to make a minor change…no Oreos!

Don’t get me wrong, I love a good Oreo (or 50). I just wanted to mix it up a bit, and since the recipe is made with cake mix, I figured it would be plenty decadent.

Ingredients:

– 1 bottle wine (this has nothing to do with the recipe…what’s baking without wine?)
– 1 box white cake mix
– 1 stick melted butter
– 1 egg
– 1/2 teaspoon peppermint extract
– 1/2 teaspoon vanilla extract
– 7-8 tablespoons cream cheese
– Crushed candy canes & chocolate chips to taste

A note about the peppermint extract…honestly, the recipe could do without. It’s a lot of peppermint. Next time, I would probably forgo the extract and rely on the candy canes. My mom insists that they aren’t too pepperminty, so I guess just use your discretion. You do you.

Combine the cake mix, butter, egg and extracts. Beat until they form a dough. Add the cream cheese. Once it’s all mixed, add the candy canes and chocolate chips until they’re evenly distributed. Cover the bowl and put it in the fridge for 30 minutes.

Roll the dough into balls. We sprinkled some extra candy cane & chocolate chips on top because WHY NOT! Bake at 350 for 10 minutes…the cookies will look under done, but that’s okay. Pull out the cookie sheets and let them rest for 2 minutes. Then transfer them to wax paper to cool.
