Easy Homemade Popsicles

This heat wave is nutso. Even though it’s pouring rain as I type this (PS it hailed earlier…what…), the past few weeks have been hawt & dangerous. Finding fun ways to cool down isn’t just a “want” anymore…it’s a NEED. I stumbled across this popsicle tray on sale for $1 at the grocery store, and thought it would be PERFECT for these hot summer days (and for a blog post as well, duh).

I scrolled through Pinterest for some fun popsicle recipes, and found some boozy inspiration from this awesome book Stefan got me for my birthday. I’m hoping to blog a few more cocktails from this book, so stay tuned for that! I made a few tweaks here and there, so keep reading for my super delicious (and SUPER easy) popsicle combos for summer!

Oh…BTW…you’ll notice that there are only 3 finished popsicles, but 4 full moulds…one of my experiments didn’t quite turn out. #DIYPROBS. I was playing around with a mango rosé recipe, but it didn’t go as planned. I’ll put the link to my Pinterest inspo below, but you can always just do what I did and enjoy a glass of rosé (or 4) while your popsicles chill. On with the show!

– Blueberry Tequila Popsicles –

Ingredients: Tequila, Sparkling Water, Lemon Juice, Blueberries

Pour tequila to taste- I used 1/4 shot per popsicle. Fill 3/4 of the mould with sparkling water, add a squirt (or a few) of lemon juice, and throw a few blueberries in! Fun tip, only add a few berries at first…they’ll saturate and sink to the bottom. Give the popsicles an hour or two to get frosty, and add a few more. They’ll end up closer to the middle and make your popsicle evenly berried!

PS, how fun is this bottle?! My bestie Kathleen bejeweled it for my birthday…it makes tequila almost bearable…

– Honey Watermelon Popsicles –

Ingredients: Watermelon, Honey, Coconut Water, Lime

Pop equal parts watermelon and coconut water into a blender, along with honey to taste (not too much! It’ll end up too sweet. Learn from me.) and a few squeezes of fresh lime. Blend ‘er up and pour away! Another tip, try to put them in the freezer asap, before the liquid has time to separate. Still delicious no matter what, but you’ll have prettier popsicles if you freeze them right away.

– Fruity Coconut Popsicles –

Ingredients: Coconut Water, Lime, Raspberries, Kiwi (or any other fruit!)

Fill 3/4 of the mould with coconut water, and add as much fruit as your little heart desires! As with the tequila blueberries, it helps to add a few pieces once the popsicles have had a chance to freeze a little bit. I ended up adding a touch of lime to this recipe as well. I love the taste of lime, and it adds an extra little punch to the sweetness of the fruit and coconut water. Experiment and see what you like!
