Berry Nectarine Crumble

Now that I’ve been getting into baking and cooking more often, I’m hoping to post some of my favourite recipes that I come across on my blog. But let’s be serious…I never follow recipes perfectly, and they never go as planned. So whenever I post recipes, I’m going to throw them under the category “Cooking for Dummies”, in which I’ll share the recipes along with my own interpretations of the “guidelines” in them. This time around I made a berry nectarine crumble, and I am OBSESSED. The original recipe can be found here…let’s jump in!

 

 

Ingredients:
– 8 nectarines
– 1 pint blueberries
– 1 cup flour
– 1 cup oats
– 1/2 cup brown sugar
– 1/2 teaspoon salt
– 1 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1/2 cup butter

The original recipe also calls for bourbon and pecans, but I was way too lazy to go get either of those things…tastes fine without, so we’ll roll with it.

First off, preheat the oven to 375º.

Slice the nectarines into manageable chunks/slices and mix them with the blueberries. The recipe calls for 7-8 nectarines, but it seemed like way too much for me, so I used 6. When the time came to pour the fruit into the pan, the fruit filling seemed to be lacking, so I tossed in a container of raspberries. INNOVATION!

 

 

In a separate bowl, combine all of the dry ingredients (apart from the butter). Once they are fully mixed, cut the stick of butter into smaller pieces and mix it in thoroughly. I wasn’t entirely sure how small to cut my pieces of butter, but I think I made it work. Apparently it should be the consistency of “crumbly wet sand”…I don’t know what kind of crumbly wet sand the original creator has been playing with, but I got more of a litterbox vibe. Gross? Ooooooops.

 

  

 

“Lightly butter a pie dish” (I read this as butter the shit out of the pan) and then pour the fruit evenly. Sprinkle the crumbly mixture over the fruit so that the filling is fully covered. Throw it in the oven for 40-45 minutes, until the berry juice bubbles at the edges.

 

 

In case this all seems a little too perfect, take a peek at the carnage that remained after I was done baking…clean up as I go along? Naaahhhhh.

 

 

After 40 minutes, take ‘er out of the oven and leave it to cool for 10 ish minutes. Serve it with some ice cream (or just maul it like I did). Voila! Enjoy and share with your friends…or don’t.
